Vegan Garlic Cheesy Pullapart Bread
Will repel all vampires in a 10km radius.
This recipe is so easy it almost feels like cheating to call it a recipe. If you can chop herbs, mince garlic, and aren’t afraid of opening a can of biscuits this one is for you. My idea was to create something that would be a super easy side dish you could bring to a dinner that has vegans and non-vegans alike. It’s pretty accessible and might be a good intro for those who are plant curious at the table.
But fair warning… it’s very very garlicky according to some people who love garlic (my Dad). He is my unofficial non-vegan taste tester. And while he did make quite a few, “how much garlic did you put in this?” comments, he also polished off his serving and asked for seconds. Not even the vegan cheese stopped him from eating half the loaf.
Personally I think it was the perfect amount of garlic. But I give you this warning to say, if you’re the type of person to automatically double the amount of garlic in any recipe… maybe don’t do that this time.
Makes: one loaf - no judgement on how many people you want to share it with
Ingredients:
1 can Pillsbury country biscuits*
1/2 cup vegan Becel margarine
3 large garlic cloves, minced
1/3 cup fresh chives, chopped
1/3 cup fresh parsley, chopped
100 g Violife cheddar shreds
olive oil to grease a pan
*Note: Check the can if you’re buying another brand or you are outside Canada, but the brand in my store is vegan. A lot of Pillsbury is vegan but the pie shells contain lard so always read the ingredients first.
Preheat your oven to 375F.
In a bowl mix together your margarine, garlic, chives, and parsley. Make sure you’re using a nice soft margarine and not one of the hard plant based butters.
Get a glass loaf pan and drop a small amount of olive oil in just to barely coat the bottom. You’re already putting a ton of margarine into this and the biscuits are greasy, so this is just to help things not stick. Probably unnecessary but it gives me peace of mind. The idea here is that the biscuits are going to cook in the herb butter and crisp up on the outside almost frying the bread.
Open your can of biscuits and divide it into two equal halves. Cut each biscuit into quarters and separate so you have two little piles of dough chunks.
Layer the first half of the dough chunks into the glass loaf pan. It’s okay if it’s not covering every spot they will expand while baking. Spread half of the garlic herb mix onto the dough bits followed by almost all of the cheese (save a bit for the top). Layer in your second half of the dough chunks and spread the remaining garlic herb mix on top with the last bit of the cheese.
Bake at 375F for 35 minutes.
Your house will smell like garlic. A lot of garlic. And when you pull it out of the oven you will see some oily bits on the sides, that’s okay. Leave it to sit for 5-10 minutes and that will all absorb into the bread.
That’s it! Just dig in and tell you’re doubting non-vegan friends that yes, vegan food can be delicious, and no we don’t just eat piles of lettuce.
